INGREDIENTS
5 oz Chicken breast
1.5 cups Broccoli florets
0.5 cup Cooked brown rice
0.25 cup Fresh orange juice
2 tbsp Coconut aminos
1 tsp Honey
1 tsp Arrowroot powder
1 tsp Fresh ginger
1 clove Garlic
0.5 tsp Toasted sesame oil
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Sesame seeds
1 tbsp Green onions
PREPARATION
Preheat oven to 400°F and line a baking sheet with parchment paper.
Cut chicken breast into 1-inch cubes and season with sea salt and black pepper.
In a small bowl, whisk together orange juice, coconut aminos, honey, arrowroot powder, minced ginger, garlic, and sesame oil.
Place chicken and broccoli florets on the baking sheet and pour half of the orange sauce over them, tossing to coat evenly.
Bake for 15-18 minutes until the chicken is cooked through and the broccoli is tender-crisp.
While baking, simmer the remaining sauce in a small pan over medium heat until thickened into a glossy glaze.
Serve the baked chicken and broccoli over cooked brown rice, drizzled with the extra glaze and garnished with sesame seeds and green onions.
