Seared Salmon Fillet with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over creamy cauliflower mash with garlicky green beans, finished with a bright squeeze of fresh lemon.
INGREDIENTS
6.5 oz Salmon Fillet
2 cups Cauliflower florets
1 cup Green beans
2 tbsp Nonfat Greek yogurt
1 tsp Extra virgin olive oil
1 tsp Grass-fed butter
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for about 10-12 minutes until very tender.
Transfer the steamed cauliflower to a food processor or blender, add the nonfat Greek yogurt, salt, and pepper, and process until smooth and creamy.
While cauliflower steams, trim the ends of the green beans and mince the garlic.
Heat a skillet over medium heat with the grass-fed butter, add the green beans and garlic, and sauté for 5-7 minutes until crisp-tender.
Season the salmon fillet with sea salt and black pepper on both sides.
Heat the olive oil in a separate non-stick skillet over medium-high heat and sear the salmon for 4-5 minutes per side until the exterior is golden and the center is just opaque.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side.
