Baked Ziti with Ricotta and Sausage
Al dente chickpea ziti tossed with savory turkey sausage and a vibrant marinara, topped with a dollop of creamy ricotta and melted mozzarella.
INGREDIENTS
1.5 oz Chickpea ziti
4 oz Ground turkey sausage
1 tsp Extra virgin olive oil
0.5 cup Grated zucchini
0.5 cup Sugar-free marinara sauce
0.25 tsp Dried oregano
0.25 tsp Garlic powder
0.25 tsp Sea salt
0.25 tsp Black pepper
2 tbsp Part-skim ricotta cheese
0.5 oz Shredded part-skim mozzarella cheese
1 tbsp Fresh basil
PREPARATION
Preheat your oven to 375°F (190°C).
Bring a small pot of salted water to a boil and cook the chickpea ziti for 2 minutes less than the package directions for a firm texture. Drain and set aside.
In a non-stick skillet, heat the olive oil over medium heat. Add the ground turkey sausage, breaking it apart with a spatula until browned and cooked through.
Stir the grated zucchini into the skillet and sauté for 2 minutes until softened.
Add the marinara sauce, dried oregano, garlic powder, sea salt, and black pepper to the skillet. Simmer for 3 minutes.
Fold the cooked ziti into the sauce until evenly coated.
Transfer the mixture to a small oven-safe baking dish. Dollop the ricotta cheese over the top and sprinkle with the shredded mozzarella.
Bake for 10-15 minutes until the cheese is melted and the sauce is bubbling.
Garnish with freshly chopped basil before serving.
