Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over creamy cauliflower mash with garlicky green beans, finished with a squeeze of bright, zesty lemon.
INGREDIENTS
6 oz Salmon Fillet
2 cups Cauliflower florets
2 tbsp Non-fat Greek Yogurt
1 cup Green Beans
2 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
1 tbsp Lemon juice
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
Transfer the steamed cauliflower to a food processor or bowl and mash with Greek yogurt and a pinch of salt until smooth and creamy.
Heat one teaspoon of olive oil in a skillet over medium heat and sauté the green beans and minced garlic until the beans are crisp-tender.
Season the salmon fillet with salt and pepper.
Heat the remaining teaspoon of olive oil in a separate non-stick pan over medium-high heat.
Place the salmon skin-side down and sear for 4-5 minutes, then flip and cook for another 3-4 minutes until golden and flaky.
Serve the salmon over the cauliflower mash with the garlicky green beans on the side, finishing the dish with a fresh squeeze of lemon juice.
