INGREDIENTS
100g Very Ripe Sweet Plantain (yellow with black spots)
50g White Sweet Potato, peeled and cubed
45g Vanilla Whey Protein Isolate
60ml Unsweetened Almond Milk
1 tsp Ground Cinnamon
PREPARATION
Steam the cubed white sweet potato and the sweet plantain until both are very tender, approximately 10-12 minutes.
Allow the steamed ingredients to cool slightly so they do not cook the protein powder upon contact.
Place the cooked plantain, sweet potato, vanilla whey protein, almond milk, and cinnamon into a high-speed blender or food processor.
Blend on high until the mixture is completely smooth and reaches a pudding-like consistency.
If the mixture is too thick, add an extra splash of almond milk one tablespoon at a time.
Transfer the pudding to a bowl and refrigerate for at least 30 minutes to allow the texture to set.
Serve chilled with an extra sprinkle of cinnamon on top.
