Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared wild sockeye salmon served over creamy cauliflower mash with a side of garlic-sautéed green beans, finished with a bright, zesty squeeze of lemon.
INGREDIENTS
7 oz Wild Sockeye Salmon Fillet
1.5 cups Cauliflower florets
1 cup fresh Green Beans
1.5 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
1 tbsp Lemon Juice
Pinch of Sea Salt and Black Pepper
PREPARATION
Steam the cauliflower florets until very tender, approximately 10-12 minutes.
While cauliflower steams, heat half of the olive oil in a skillet over medium-high heat.
Season the salmon fillet with sea salt and pepper, then sear in the skillet for 4-5 minutes per side until the skin is crispy and the fish is cooked through.
In a separate small pan, heat the remaining oil and sauté the green beans and minced garlic until the beans are bright green and tender-crisp.
Drain the steamed cauliflower and blend or mash with a splash of lemon juice and a pinch of salt until creamy and smooth.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side.
Finish with an extra squeeze of fresh lemon over the salmon.
