6 oz Grass-fed sirloin steak
1 tbsp Ghee
10 medium Asparagus spears
2 cloves Garlic
1 sprig Fresh rosemary
1 sprig Fresh thyme
0.5 tsp Sea salt
0.25 tsp Black pepper
1 tsp Avocado oil
PREPARATION
Pat the steak dry with paper towels and season both sides generously with sea salt and black pepper.
Snap the woody ends off the asparagus and toss the spears with half of the avocado oil.
Heat a cast-iron skillet over medium-high heat with the remaining avocado oil until it begins to shimmer.
Place the steak in the hot skillet and sear for 3-4 minutes per side for medium-rare doneness.
Add the ghee, smashed garlic cloves, rosemary, and thyme to the pan during the last 2 minutes of cooking.
Tilt the pan slightly and spoon the melting herb ghee over the steak repeatedly to baste the meat.
Remove the steak from the pan and let it rest on a cutting board for 5 minutes.
In the same pan, sauté the asparagus for 4-5 minutes until bright green and tender.
