INGREDIENTS
5 oz Wild Atlantic Salmon
150g Sweet Potato, peeled and cubed
1 cup Fresh Green Beans
1 tsp Avocado Oil
1 tsp Ghee
1 clove Garlic, minced
PREPARATION
Place the cubed sweet potatoes in a pot of boiling water and cook for 10-12 minutes until fork-tender.
Drain the sweet potatoes and mash them with half of the ghee and a pinch of sea salt until smooth and creamy.
Pat the salmon dry with a paper towel and season both sides with salt and black pepper.
Heat the avocado oil in a non-stick skillet over medium-high heat.
Place the salmon in the skillet skin-side up and sear for 4 minutes, then flip and cook for another 3-4 minutes until the skin is crisp and the fish is cooked through.
In a separate small pan, melt the remaining ghee over medium heat and sauté the green beans and minced garlic for 5-6 minutes until tender-crisp.
Serve the seared salmon over the sweet potato mash with the garlic green beans on the side.
