100g Sweet Potato
1 cup Green Beans
2 tsp Olive Oil
2 Garlic Cloves
1/2 Lemon
PREPARATION
Peel and cube the sweet potato, then boil in water until tender, about 10-12 minutes.
Drain the potatoes and mash until smooth, seasoning with a pinch of sea salt.
Pat the salmon dry and season with salt and pepper.
Heat one teaspoon of olive oil in a skillet over medium-high heat and sear the salmon skin-side down for 4 minutes until crisp.
Flip the salmon and cook for another 3 minutes, then remove from the pan.
In the same pan, add the remaining oil and sauté the green beans and minced garlic for 5 minutes until tender-crisp.
