PREPARATION
Preheat your oven to 400°F and line a rimmed baking sheet with parchment paper for easy cleanup.
Toss the cubed yellow potatoes in a bowl with half of the olive oil, half of the minced garlic, the fresh rosemary, and the fresh thyme.
Spread the potatoes in a single layer on the baking sheet and roast for 20-25 minutes until they are tender and the edges are golden-brown.
While the potatoes roast, pat the top sirloin steak dry with a paper towel and season both sides with the sea salt and black pepper.
Heat the remaining olive oil in a heavy cast-iron skillet over medium-high heat until the oil is shimmering and just starting to smoke.
