Fresh ahi tuna marinated in a savory tamari-ginger sauce, served over nutty brown rice with crisp vegetables and creamy avocado.
INGREDIENTS
6 oz Ahi tuna
0.5 cup Cooked brown rice
0.25 cup Shelled edamame
0.5 cup Cucumber
0.25 cup Shredded carrots
0.25 whole Avocado
1 tbsp Tamari
1 tsp Toasted sesame oil
1 tbsp Rice vinegar
1 tsp Fresh ginger
1 tbsp Green onion
1 tsp Sesame seeds
0.25 tsp Sea salt
PREPARATION
Using a sharp knife, dice the sushi-grade ahi tuna into 1/2-inch cubes and place them in a medium glass mixing bowl.
In a small bowl, whisk together the tamari, toasted sesame oil, rice vinegar, grated fresh ginger, and sea salt until well combined.
Pour the marinade over the tuna cubes, add the sliced green onions, and toss gently to coat; let it marinate in the refrigerator for 10-15 minutes.
Place the warm cooked brown rice in the bottom of a serving bowl as the base.
Arrange the marinated tuna, shelled edamame, sliced cucumber, shredded carrots, and sliced avocado on top of the rice in separate sections.
Garnish the entire bowl with sesame seeds and an extra sprinkle of green onions before serving immediately.
