2 clove Garlic

1 cup Asparagus
0.5 cup Carrots
PREPARATION
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a small bowl, whisk together the extra virgin olive oil, minced garlic, chopped rosemary, thyme, sea salt, and black pepper.
Place the beef tenderloin on one side of the prepared baking sheet and rub half of the garlic-herb mixture over all sides of the meat.
Add the asparagus and sliced carrots to the other side of the sheet pan and toss them with the remaining herb oil until evenly coated.
Roast in the oven for 15 to 20 minutes, or until the beef reaches an internal temperature of 135°F for medium-rare.
Remove from the oven and transfer the beef to a cutting board, allowing it to rest for at least 5 to 10 minutes to lock in the juices.
Slice the beef into medallions and serve alongside the roasted vegetables.
