1 oz fresh mozzarella cheese
2 slice tomato

1 tsp basil pesto
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Season the chicken breast with sea salt and black pepper on both sides.
Heat a grill pan over medium-high heat and cook the chicken for 5-6 minutes per side until the internal temperature reaches 165°F, then slice it thinly.
Lay out the sprouted grain bread slices and spread the basil pesto evenly on the inside of one slice.
Layer the sliced chicken, fresh mozzarella, tomato slices, and fresh basil leaves on top of the pesto.
Drizzle the balsamic glaze over the basil leaves and top with the second slice of bread.
Lightly brush the exterior of the sandwich with extra virgin olive oil.
Place the sandwich back on the grill pan over medium heat, pressing down with a heavy skillet for 2-3 minutes per side until the bread is toasted and the cheese is gooey.
