Ground Beef Stuffed Bell Peppers with Tomato Sauce
Lean ground beef and aromatic herbs simmered in a savory tomato sauce are baked inside vibrant bell peppers until they reach a tender, fork-soft consistency.
INGREDIENTS
8 oz Ground beef (93% lean)
2 medium Bell peppers
0.5 cup Tomato puree
0.25 cup Yellow onion
1 clove Garlic
0.5 tsp Dried oregano
0.5 tsp Sea salt
0.25 tsp Black pepper
1 tsp Olive oil
1 tbsp Fresh parsley
PREPARATION
Preheat oven to 375°F. Slice the tops off the bell peppers and remove the seeds and membranes.
In a skillet over medium heat, add olive oil and sauté the diced onion and minced garlic until translucent and fragrant.
Add the ground beef to the skillet, breaking it apart with a wooden spoon, and cook until browned throughout.
Stir in the sea salt, black pepper, and dried oregano, then mix in half of the tomato puree.
Place the bell peppers upright in a baking dish and fill them generously with the beef mixture.
Spoon the remaining tomato puree over the top of each stuffed pepper.
Add a splash of water to the bottom of the dish, cover with foil, and bake for 35 minutes or until the peppers are soft.
Garnish with fresh parsley before serving.
