Garlic-Herb Chicken and Roasted Broccoli
Tender chicken breast pan-seared with aromatic garlic and fresh herbs, served alongside crisp-tender roasted broccoli florets finished with a bright squeeze of lemon.
INGREDIENTS
5.5 oz Chicken breast
1.5 cups Broccoli florets
1.5 tbsp Extra virgin olive oil
2 cloves Garlic
1 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Fresh lemon juice
PREPARATION
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Place the broccoli florets on the baking sheet, drizzle with 0.5 tbsp of olive oil, and season with a pinch of sea salt and black pepper.
Roast the broccoli for 15-20 minutes until the edges are slightly charred and the stems are tender.
While the broccoli is roasting, season the chicken breast evenly on both sides with the dried oregano, remaining sea salt, and black pepper.
Heat the remaining 1 tbsp of olive oil in a medium skillet over medium-high heat.
Add the chicken to the skillet and sear for 6-7 minutes per side, or until the internal temperature reaches 165°F.
Reduce the heat to low, add the minced garlic to the skillet, and cook for 1-2 minutes until fragrant, being careful not to burn the garlic.
Remove the chicken from the heat and plate it alongside the roasted broccoli.
Drizzle the fresh lemon juice over both the chicken and the broccoli before serving.
