Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon fillet served alongside tender steamed green beans and creamy garlic mashed cauliflower.
INGREDIENTS
6.5 oz Salmon Fillet
1 cup Green Beans
1.5 cups Cauliflower florets
2 cloves Garlic, minced
0.5 tsp Olive Oil
0.5 tsp Ghee
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
While cauliflower steams, trim the green beans and steam them in a separate basket for 5-7 minutes until tender-crisp and bright green.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until the internal temperature reaches 145 degrees Fahrenheit.
Transfer the steamed cauliflower to a bowl or food processor, add the ghee and minced garlic, and blend or mash until smooth and creamy.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the green beans on the side.
