6 oz Salmon Fillet
1 cup Green Beans
2 cups Cauliflower florets
1 tsp Extra Virgin Olive Oil
2 tbsp Non-fat Greek Yogurt
1 clove Garlic
PREPARATION
Steam the cauliflower florets and the peeled garlic clove together until the cauliflower is very tender, about 10-12 minutes.
While cauliflower is steaming, trim the green beans and steam them in a separate basket for 5-7 minutes until tender-crisp and bright green.
Pat the salmon fillet dry with a paper towel and season both sides with salt and pepper.
Heat the olive oil in a non-stick skillet over medium-high heat. Place the salmon skin-side down (if applicable) and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 3-4 minutes until the internal temperature reaches 145°F and the fish flakes easily.
Transfer the steamed cauliflower and garlic to a food processor or bowl. Add the Greek yogurt and a pinch of salt and pepper, then blend or mash until smooth and creamy.
