Seared Salmon Fillet with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over a creamy cauliflower mash with garlic-sautéed green beans, finished with a squeeze of lemon and a perfectly crispy skin.
INGREDIENTS
6.5 ounces Salmon Fillet
1.5 cups Cauliflower florets
1 cup Green beans
3 tablespoons Nonfat Greek yogurt
1 teaspoon Extra virgin olive oil
2 cloves Garlic, minced
PREPARATION
Steam the cauliflower florets until they are very tender, about 10-12 minutes.
Transfer the steamed cauliflower to a food processor or bowl and blend with the Greek yogurt and a pinch of salt until smooth and creamy.
In a non-stick skillet, heat half of the olive oil over medium heat and sauté the green beans and minced garlic until the beans are crisp-tender.
Pat the salmon fillet dry with a paper towel and season with salt and pepper.
Heat the remaining olive oil in a separate pan over medium-high heat and sear the salmon skin-side down for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 2-3 minutes until the fish is cooked through to your preference.
Plate the cauliflower mash first, top with the seared salmon, and serve the garlic green beans on the side.
