Seared Salmon Fillet with Steamed Broccoli and Garlic Mashed Cauliflower
Pan-seared salmon served over garlic cauliflower mash and steamed broccoli, finished with a bright squeeze of zesty lemon.
INGREDIENTS
6.2 oz Wild Salmon Fillet
1.5 cups Broccoli Florets
1.5 cups Cauliflower Florets
1 tsp Ghee
1 tsp Extra Virgin Olive Oil
1 clove Garlic
PREPARATION
Place cauliflower florets in a steamer basket over boiling water and steam for 10-12 minutes until very tender.
Add broccoli florets to the steamer during the last 5 minutes of cooking until they are bright green and tender-crisp.
Transfer the steamed cauliflower to a bowl or food processor and blend with the minced garlic and ghee until smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4-5 minutes until a golden crust forms.
Flip the fillet and cook for another 3-4 minutes until the salmon is cooked through and flakes easily with a fork.
Plate the garlic mashed cauliflower first, top with the seared salmon, and serve the steamed broccoli on the side with an optional squeeze of fresh lemon.
