PREPARATION
Preheat oven to 400°F (200°C) and lightly grease a baking sheet with extra virgin olive oil.
Pat the chicken breast dry and season both sides with sea salt, black pepper, garlic powder, and dried oregano.
In a shallow bowl, whisk the egg white until slightly frothy.
Place the panko breadcrumbs in another shallow bowl.
Dip the chicken into the egg white, then press into the panko until evenly coated on both sides.
Place chicken on the prepared baking sheet and bake for 15 minutes.
Remove from oven, top with marinara sauce and mozzarella cheese, then sprinkle with parmesan.
