1.5 oz Soba noodles
1 tbsp Extra virgin olive oil
3 cloves Garlic
0.25 tsp Red pepper flakes
2 tbsp Lemon juice
1 tsp Lemon zest
0.25 cup Fresh parsley
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Bring a medium pot of water to a boil and cook the soba noodles according to package instructions until al dente.
While the noodles cook, pat the shrimp dry with paper towels and season them evenly with sea salt and black pepper.
Heat the extra virgin olive oil in a large skillet over medium-high heat.
Add the shrimp to the skillet in a single layer and sauté for 2-3 minutes until they turn pink and opaque, then remove them from the pan and set aside.
In the same skillet, add the minced garlic and red pepper flakes, sautéing for about 30-60 seconds until fragrant but not browned.
Deglaze the pan with lemon juice and stir in the lemon zest.
Add the cooked soba noodles and the sautéed shrimp back into the skillet, tossing well to coat everything in the garlic-lemon oil.
