Seared Salmon with Roasted Broccoli and Garlic Mashed Cauliflower
Pan-seared salmon fillet served alongside crispy roasted broccoli and garlic-infused mashed cauliflower for a comforting yet light meal.
INGREDIENTS
5.25 ounces Wild Atlantic Salmon Fillet
1 cup Broccoli Florets
2 cups Cauliflower Florets
1/4 cup Non-fat Greek Yogurt
1.5 teaspoons Extra Virgin Olive Oil
2 cloves Garlic, minced
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the broccoli florets with 1/2 teaspoon of olive oil, salt, and pepper, then spread them on the baking sheet and roast for 15-20 minutes until the edges are crispy.
While the broccoli roasts, steam the cauliflower florets in a steamer basket over boiling water until they are very tender, about 10-12 minutes.
Transfer the steamed cauliflower to a food processor or blender along with the Greek yogurt and minced garlic, blending until the mixture is smooth and creamy.
Season the salmon fillet with a pinch of salt and pepper.
Heat the remaining 1 teaspoon of olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan and sear for 4-5 minutes on the first side, then flip and cook for another 3-4 minutes until the fish is opaque and flakes easily.
Serve the seared salmon over a bed of the garlic mashed cauliflower with the roasted broccoli on the side.
