Spicy Gochujang Pork Bowl
Sautéed pork tenderloin glazed in a fiery gochujang sauce, served over nutty brown rice with crisp cucumbers and tangy kimchi for a vibrant crunch.
INGREDIENTS
6 oz Pork tenderloin
1 tbsp Gochujang paste
1 tbsp Tamari
1 tsp Toasted sesame oil
1 tsp Raw honey
0.5 cup Cooked brown rice
1 cup Fresh baby spinach
0.25 cup Kimchi
0.25 cup Cucumber
1 tsp Toasted sesame seeds
1 clove Garlic
0.5 tsp Fresh ginger
1 stalk Green onion
PREPARATION
Thinly slice the pork tenderloin into bite-sized strips and mince the garlic and ginger.
In a small bowl, whisk together the gochujang, tamari, honey, and half of the sesame oil to create the glaze.
Heat the remaining sesame oil in a large skillet over medium-high heat. Add the pork strips and sear until golden brown and cooked through, about 4-5 minutes.
Stir in the garlic and ginger, cooking for 30 seconds until fragrant, then pour the gochujang glaze over the pork and toss to coat until sticky.
In the same pan, push the pork to one side and add the baby spinach, sautéing for 1 minute until just wilted.
Place the warm brown rice in a bowl and top with the glazed pork, wilted spinach, kimchi, and sliced cucumbers.
Garnish with sliced green onions and toasted sesame seeds before serving.
