Pan-Seared Steak and Eggs with Roasted Potatoes
Sizzling lean sirloin steak pan-seared to perfection and served alongside golden roasted potatoes and two sunny-side-up eggs for a protein-packed morning.
INGREDIENTS
4 oz Top sirloin steak
2 large Eggs
1 cup Red potatoes
1 tsp Olive oil
1 tsp Ghee
0.25 tsp Sea salt
0.25 tsp Black pepper
0.25 tsp Garlic powder
1 tsp Fresh parsley
PREPARATION
Preheat oven to 400°F. Toss cubed red potatoes with olive oil, half the sea salt, black pepper, and garlic powder on a baking sheet. Roast for 20-25 minutes until golden and crispy.
Season the top sirloin steak with the remaining sea salt and black pepper. Heat a cast-iron skillet over medium-high heat with half the ghee.
Sear the steak for 3-4 minutes per side for medium-rare. Remove from the pan and let rest for 5 minutes before slicing against the grain.
In the same skillet, reduce heat to medium and add the remaining ghee. Crack the eggs into the pan and cook until whites are set but yolks remain runny.
Serve the sliced steak alongside the roasted potatoes and eggs. Garnish with chopped fresh parsley.
