150g Green Beans

PREPARATION

Drain the sweet potatoes and mash them until smooth, seasoning with a pinch of sea salt and black pepper.
Steam the green beans for 4-5 minutes until bright green and crisp-tender.
Heat half of the olive oil in a skillet over medium heat, add the minced garlic and steamed green beans, and sauté for 2 minutes.
Season the salmon with salt and pepper. In a separate non-stick skillet, heat the remaining olive oil over medium-high heat.
Place the salmon skin-side down and sear for 4-5 minutes, then flip and cook for another 2-3 minutes until opaque throughout.
