Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served with creamy garlic-mashed cauliflower and tender steamed green beans, finished with a squeeze of bright lemon.
INGREDIENTS
6.8 oz Wild Sockeye Salmon Fillet
150g Cauliflower Florets
100g Fresh Green Beans
2 tsp Ghee
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water until very tender, approximately 10 to 12 minutes.
Place the green beans in the steamer during the last 5 to 7 minutes of the cauliflower's cooking time until they are vibrant green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat and sear the salmon for 4 to 5 minutes per side until the edges are crisp and the center is cooked through.
Transfer the steamed cauliflower to a bowl or food processor and blend with the ghee and minced garlic until smooth and creamy.
Plate the garlic mashed cauliflower and green beans alongside the seared salmon and serve immediately with an optional fresh lemon wedge.
