Pat the pork loin dry with a paper towel and rub the garlic-herb paste evenly over all sides of the meat.
Place the pork loin on the prepared baking sheet and roast for 25 to 30 minutes, or until the internal temperature reaches 145°F (63°C).
While the pork is roasting, trim the green beans and steam them for 5-7 minutes until they are vibrant and tender-crisp.
Once the pork is finished, remove it from the oven and let it rest for at least 5 to 10 minutes to allow the juices to redistribute.
Toss the steamed green beans with the fresh lemon juice and a pinch of extra sea salt if desired.
Slice the pork loin into medallions and serve immediately alongside the lemon green beans.
