Seared Pork Loin with Roasted Sweet Potatoes and Garlic Sautéed Spinach
Pan-seared pork loin rubbed with warm Caribbean spices, served with roasted sweet potatoes and garlic-flecked spinach for a vibrant, citrusy finish.
INGREDIENTS
6 oz Pork Loin (Center Cut)
150g Sweet Potato, cubed
2 cups Fresh Spinach
1 tbsp Extra Virgin Olive Oil
3 cloves Garlic, minced
1 tbsp Lime Juice
1 tsp Salt-free Adobo Seasoning
1/2 tsp Dried Oregano
PREPARATION
Preheat your oven to 400°F (200°C).
Toss the cubed sweet potatoes with half of the olive oil and a pinch of the adobo seasoning on a parchment-lined baking sheet.
Roast the sweet potatoes for 20-25 minutes until tender and slightly caramelized on the edges.
While potatoes roast, season the pork loin with the remaining adobo, dried oregano, and one minced garlic clove.
Heat a skillet over medium-high heat with the remaining olive oil and sear the pork loin for 5-7 minutes per side until the internal temperature reaches 145°F.
Remove the pork from the pan and let it rest for 5 minutes.
In the same skillet, add the remaining minced garlic and sauté for 30 seconds until fragrant.
Add the fresh spinach and lime juice to the skillet, tossing quickly until the spinach is just wilted.
Slice the pork loin and serve alongside the roasted sweet potatoes and garlic spinach.
