Seared Chicken Thighs with Garlic Green Beans and Sweet Potato Mash
Pan-seared chicken thighs served with creamy mashed sweet potatoes and garlic-sautéed green beans, finished with a squeeze of lemon for a bright, zesty touch.
INGREDIENTS
7 oz Boneless Skinless Chicken Thighs
150g Sweet Potato, peeled and cubed
150g Fresh Green Beans, trimmed
1 tsp Extra Virgin Olive Oil
2 cloves Garlic, minced
Salt, black pepper, and paprika to taste
PREPARATION
Place the cubed sweet potatoes in a pot of water and bring to a boil, cooking for 10-12 minutes until fork-tender.
While potatoes boil, season the chicken thighs on both sides with salt, pepper, and a dusting of paprika.
Heat the olive oil in a large non-stick skillet over medium-high heat.
Place the chicken in the skillet and sear for 5-7 minutes per side until the internal temperature reaches 165°F and the outside is golden brown.
Remove the chicken from the pan and set aside to rest.
In the same skillet, add the green beans and minced garlic with a tablespoon of water, covering with a lid for 3 minutes to steam.
Remove the lid and sauté the beans for another 2 minutes until tender-crisp and lightly browned.
Drain the sweet potatoes and mash them thoroughly, adding a pinch of salt and pepper for flavor.
Serve the seared chicken alongside the sweet potato mash and garlic green beans.
