In a medium mixing bowl, combine the ground beef, sautéed onion and garlic, egg, almond flour, smoked paprika, sea salt, and black pepper.
Gently mix the ingredients by hand until just combined, being careful not to overwork the meat.
Shape the mixture into a compact loaf and place it in the prepared baking dish.
Drape the bacon slices over the top of the meatloaf, tucking the ends underneath the loaf.
Brush 1 tablespoon of the sugar-free BBQ sauce evenly over the bacon layer.
Bake for 35-40 minutes, or until the internal temperature of the meatloaf reaches 160°F.
Brush the remaining tablespoon of BBQ sauce over the top during the last 5 minutes of cooking for a glossy finish.
Let the meatloaf rest for 5 minutes before slicing into thick portions and serving.
