Seared Salmon Fillet with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared wild salmon served over creamy garlic-infused cauliflower mash with a side of tender-crisp green beans, finished with a squeeze of zesty lemon.
INGREDIENTS
6.5 oz Wild Atlantic Salmon Fillet
250g Cauliflower Florets
100g Green Beans
1 tsp Avocado Oil
1 tsp Ghee
1 tbsp Non-fat Greek Yogurt
1 clove Garlic, minced
PREPARATION
Steam the cauliflower florets in a steamer basket over boiling water for 10-12 minutes until very tender.
Add the green beans to the steamer during the last 5 minutes of cooking so they remain bright green and tender-crisp.
While vegetables steam, pat the salmon fillet dry with a paper towel and season with sea salt and black pepper.
Heat avocado oil in a non-stick skillet over medium-high heat and sear the salmon skin-side down for 4-5 minutes until crispy.
Flip the salmon and cook for another 2-3 minutes until the internal temperature reaches 145°F.
Transfer the steamed cauliflower to a bowl or food processor and add the minced garlic, ghee, and Greek yogurt.
Mash or blend the cauliflower until smooth and creamy, seasoning with salt to taste.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the steamed green beans on the side.
