6 ounces Salmon Fillet
2 cups Cauliflower florets
1.5 cups Green beans
1 tablespoon Extra Virgin Olive Oil
2 cloves Garlic, minced
2 tablespoons Nonfat Plain Greek Yogurt
PREPARATION
Steam the cauliflower florets until very tender, about 10-12 minutes.
Drain the cauliflower well and mash or blend with the Greek yogurt and a pinch of salt until smooth and creamy.
Heat half of the olive oil in a skillet over medium heat and sauté the green beans and minced garlic until the beans are bright green and crisp-tender.
Remove the beans from the skillet and set aside.
Increase the skillet heat to medium-high and add the remaining olive oil.
Pat the salmon dry with a paper towel, season with salt and pepper, and sear for 4-5 minutes per side until the skin is golden and the fish flakes easily with a fork.
