1 medium Yukon Gold potato

0.5 tbsp Olive oil
2 cloves Garlic
1 tbsp Fresh chives
0.25 tsp Sea salt
0.25 tsp Black pepper
2 tbsp Water
PREPARATION
Peel and cube the Yukon Gold potato into one-inch pieces.
Place potato cubes in a pot of boiling water and cook for 12 minutes until fork-tender.
Season the chicken breast on both sides with half of the sea salt and black pepper.
Heat the olive oil in a skillet over medium-high heat and sear the chicken for 6 to 7 minutes per side until cooked through.
Reserve two tablespoons of the starchy potato water before draining the potatoes completely.
Return potatoes to the pot and mash with the grass-fed butter, minced garlic, and reserved water until smooth.
Stir in the fresh chives and remaining seasoning, then serve the chicken alongside the creamy mash.
