Sweet Potato and Ground Beef Hash
Sautéed lean ground beef and tender sweet potato cubes are pan-seared with aromatic peppers and onions for a savory, golden-brown finish.
INGREDIENTS
8 oz 93% lean ground beef
0.5 medium Sweet potato
0.5 cup Red onion
0.5 cup Bell pepper
0.25 tbsp Avocado oil
0.25 tsp Sea salt
0.25 tsp Black pepper
0.5 tsp Garlic powder
0.5 tsp Smoked paprika
1 tbsp Fresh parsley
PREPARATION
Heat the avocado oil in a large cast-iron skillet over medium-high heat until shimmering.
Add the cubed sweet potatoes to the skillet, cover with a lid, and cook for 8 to 10 minutes, stirring occasionally, until they are fork-tender.
Remove the lid and add the diced red onion and bell pepper, sautéing for 3 to 4 minutes until the vegetables are soft and fragrant.
Push the vegetable mixture to the edges of the pan and place the ground beef in the center, breaking it into small crumbles with a wooden spoon.
Season the beef with sea salt, black pepper, garlic powder, and smoked paprika while it browns.
Once the beef is fully cooked and no longer pink, toss all ingredients together to combine and allow the potatoes to get a slightly crispy exterior.
Remove from heat and garnish with freshly chopped parsley before serving hot.
