Baked Salmon with Lemon-Dill Sauce
Oven-roasted salmon fillet served with a cooling, velvety dill sauce and tender asparagus for a bright and satisfying meal.
INGREDIENTS
6 oz Salmon fillet
0.5 cup Greek yogurt
1 tbsp Fresh dill
1 tsp Lemon juice
0.25 tsp Sea salt
0.25 tsp Black pepper
1 cup Asparagus spears
1 tsp Olive oil
PREPARATION
Preheat your oven to 400°F and line a large rimmed baking sheet with parchment paper.
Place the salmon fillet and the trimmed asparagus spears onto the prepared baking sheet.
Drizzle the olive oil over the asparagus and season both the salmon and vegetables with the sea salt and black pepper.
Bake in the center of the oven for 12 to 15 minutes, or until the salmon is opaque and flakes easily with a fork.
While the salmon cooks, finely chop the fresh dill and whisk it into the Greek yogurt along with the lemon juice in a small bowl.
Remove the tray from the oven and transfer the salmon and asparagus to a plate.
Top the warm salmon with a generous dollop of the chilled lemon-dill sauce and serve immediately.
