Seared Salmon with Garlic Green Beans and Brown Rice
Pan-seared salmon fillet served with nutty brown rice and fresh green beans sautéed with garlic for a vibrant, crisp-tender finish.
INGREDIENTS
6.5 oz Wild Atlantic Salmon fillet
1/2 cup cooked Brown Rice
1 cup fresh Green Beans, trimmed
1 tsp Extra Virgin Olive Oil
1 clove Garlic, minced
1/2 Lemon, juiced
Pinch of sea salt and black pepper
PREPARATION
Pat the salmon fillet dry with a paper towel and season both sides with a pinch of sea salt and black pepper.
Heat half of the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side down and sear for 4-5 minutes until the skin is crispy.
Flip the salmon and cook for another 3-4 minutes until cooked through to your preference, then remove from the pan and let rest.
In the same skillet, add the remaining oil, green beans, and a splash of water; cover and steam for 3 minutes.
Remove the lid, add the minced garlic, and sauté for 1-2 minutes until the beans are crisp-tender and the garlic is fragrant.
Warm the pre-cooked brown rice in a small bowl.
Plate the salmon alongside the brown rice and garlic green beans, finishing the dish with a fresh squeeze of lemon juice over the fish and vegetables.
