Seared Salmon with Steamed Green Beans and Garlic Mashed Cauliflower
Pan-seared salmon served with tender green beans and creamy garlic mashed cauliflower, finished with a drizzle of golden melted ghee.
INGREDIENTS
7 ounces Wild-Caught Salmon Fillet
2 cups Cauliflower florets
1 cup fresh Green Beans
1 tablespoon Ghee
2 cloves Garlic
Sea salt and black pepper to taste
PREPARATION
Place cauliflower florets and peeled garlic cloves in a steamer basket over boiling water and steam for 10-12 minutes until very soft.
While the cauliflower steams, trim the ends of the green beans and steam them in a separate basket for 5-7 minutes until bright green and crisp-tender.
Pat the salmon fillet dry with a paper towel and season both sides generously with sea salt and black pepper.
Heat half of the ghee in a stainless steel or cast iron skillet over medium-high heat.
Place the salmon in the hot pan skin-side up and sear for 4-5 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
Transfer the steamed cauliflower and garlic to a bowl or food processor, add the remaining ghee and a pinch of salt, and blend until smooth and creamy.
Plate the garlic mashed cauliflower, top with the seared salmon, and serve the steamed green beans on the side.
