Seared Salmon with Garlic Green Beans and Cauliflower Mash
Pan-seared salmon served over velvety cauliflower mash and garlic-sautéed green beans, finished with a bright and citrusy zing.
INGREDIENTS
6.5 oz Wild Atlantic Salmon
2 cups Cauliflower florets
1 cup Green beans
1 tsp Ghee
1 tsp Olive oil
2 cloves Garlic, minced
1 tbsp Lemon juice
PREPARATION
Place the cauliflower florets in a steamer basket over boiling water and cook for 10-12 minutes until very tender.
Transfer the steamed cauliflower to a blender or food processor, add the ghee and a pinch of salt, and blend until completely smooth and creamy.
Pat the salmon fillet dry with a paper towel and season both sides with salt and black pepper.
Heat the olive oil in a non-stick skillet over medium-high heat.
Place the salmon in the pan skin-side up and sear for 4 minutes until a golden crust forms, then flip and cook for another 3-4 minutes until cooked through.
Remove the salmon from the pan and set aside to rest.
In the same skillet, add the green beans and minced garlic, sautéing for 3-5 minutes until the beans are crisp-tender and the garlic is fragrant.
Plate the cauliflower mash, top with the seared salmon, and serve the garlic green beans on the side.
Finish the dish with a fresh squeeze of lemon juice over the salmon and vegetables.
