Roast the vegetables for 25 to 30 minutes until the squash is tender and slightly caramelized around the edges.
While the vegetables roast, place the chicken breast in a small pot of simmering water and cook for 12 to 15 minutes until opaque throughout; remove and shred finely with two forks.
Transfer the roasted squash, apple, and onion into a high-speed blender.
Add the chicken bone broth, minced garlic, cinnamon, and nutmeg to the blender.
Blend on high until the mixture is completely smooth and velvety.
Pour the blended soup into a saucepan over medium heat, stir in the shredded chicken, and simmer for 3 minutes to combine the flavors before serving.
