PREPARATION
Peel and dice the Yukon Gold potatoes, then boil in salted water until tender, about 15 minutes.
While potatoes boil, season the sirloin steak generously with salt and pepper on both sides.
Heat olive oil in a heavy skillet over medium-high heat and sear the steak for 4-5 minutes per side for medium-rare.
Remove steak from the pan and let it rest for at least 5 minutes to lock in the juices.
