Pan-seared grass-fed sirloin basted in a fragrant garlic-herb ghee, served with crisp-tender roasted asparagus for a savory and satisfying dinner.
INGREDIENTS
6 oz Grass-fed sirloin steak
1 tbsp Ghee
1 clove Garlic
1 tsp Fresh rosemary
1 tsp Fresh thyme
0.5 tsp Sea salt
0.25 tsp Black pepper
1 cup Asparagus spears
PREPARATION
Pat the steak dry with paper towels and season both sides with sea salt and black pepper.
Heat a cast-iron skillet over medium-high heat until very hot.
Add the steak to the dry pan and sear for 3-4 minutes per side for medium-rare.
Lower the heat to medium and add the ghee, smashed garlic clove, rosemary, and thyme to the skillet.
Tilt the pan and spoon the melted herb ghee over the steak repeatedly for 1 minute.
Remove the steak to a plate and let it rest for 5 minutes.
While the steak rests, toss the asparagus into the same skillet and sauté in the remaining herb ghee for 3-5 minutes until bright green and tender.
Slice the steak against the grain and serve alongside the asparagus.
