Cajun Shrimp with Creamy Grits
Sautéed Cajun shrimp served over stone-ground grits made creamy with a touch of ghee and Greek yogurt, offering a velvety texture and bold, spicy flavors.
INGREDIENTS
8 oz Shrimp
0.25 cup Stone-ground grits
1 cup Water
1 tbsp Ghee
2 tbsp Plain Greek yogurt
0.5 cup Red bell pepper
0.25 cup Yellow onion
1 tsp Olive oil
1 tsp Cajun seasoning
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tbsp Fresh parsley
PREPARATION
In a small saucepan, bring 1 cup of water and a pinch of sea salt to a boil.
Whisk in the stone-ground grits, reduce heat to low, cover, and simmer for 15-20 minutes until tender and thick.
While the grits cook, heat the olive oil in a large skillet over medium-high heat.
Add the diced yellow onion and red bell pepper to the skillet, sautéing for 3-4 minutes until softened.
Toss the shrimp with the Cajun seasoning, sea salt, and black pepper in a small bowl until evenly coated.
Add the shrimp to the skillet and cook for 2-3 minutes per side until they are opaque and have a light char.
Once the grits are fully cooked, remove them from the heat and stir in the ghee and Greek yogurt until the mixture is velvety.
Spoon the creamy grits into a shallow bowl and top with the sautéed Cajun shrimp and vegetables.
Garnish with fresh chopped parsley and serve immediately.
