Honey-Garlic Chicken Thighs with Roasted Carrots
Pan-seared chicken thighs glazed in a sticky honey-garlic reduction and served with tender roasted carrots for a wholesome, kid-approved dinner.
INGREDIENTS
7 oz Boneless skinless chicken thighs
1 cup Carrots
0.5 tbsp Extra virgin olive oil
1 tbsp Raw honey
1 tbsp Tamari
2 cloves Garlic
0.25 tsp Sea salt
0.25 tsp Black pepper
1 tsp Apple cider vinegar
PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the sliced carrots with half of the olive oil and a pinch of the sea salt and black pepper.
Roast the carrots for 20-22 minutes until they are tender and slightly caramelized on the edges.
In a small glass bowl, whisk together the raw honey, tamari, minced garlic, and apple cider vinegar to create the glaze.
Season the chicken thighs on both sides with the remaining sea salt and black pepper.
Heat the remaining olive oil in a large oven-safe skillet over medium-high heat.
Sear the chicken thighs for 4-5 minutes per side until a deep golden-brown crust has formed.
Pour the honey-garlic glaze into the skillet over the chicken and transfer the entire pan into the oven for 5-6 minutes.
Remove from the oven, spoon the thickened sticky sauce over the chicken, and serve alongside the roasted carrots.
