Seared Salmon with Roasted Asparagus and Sweet Potato Mash
Pan-seared wild salmon served over smooth mashed sweet potatoes and garlic-roasted asparagus, finished with a squeeze of zesty lemon.
INGREDIENTS
7 oz Wild Atlantic Salmon
150g Sweet Potato
100g Asparagus
1 tsp Olive Oil
1 tbsp Lemon Juice
1 clove Garlic
PREPARATION
Peel and cube the sweet potato, then boil in water until tender, about 12-15 minutes.
Preheat oven to 400°F and toss asparagus with half the olive oil, minced garlic, salt, and pepper.
Roast asparagus on a sheet pan for 10-12 minutes until tender-crisp.
Pat salmon dry with a paper towel and season with salt and pepper.
Heat the remaining olive oil in a non-stick skillet over medium-high heat.
Sear the salmon skin-side down for 4-5 minutes, then flip and cook for another 2-3 minutes until golden.
Drain the sweet potatoes and mash until smooth, adding a splash of water and half the lemon juice for consistency.
Plate the salmon over the sweet potato mash with the roasted asparagus on the side and a final squeeze of lemon.
