PREPARATION
Preheat your oven to 400°F and line a baking sheet with parchment paper.
Toss the cubed butternut squash and chicken breast with 1 teaspoon of olive oil and a pinch of salt.
Roast for 25 minutes until the squash is fork-tender and the chicken is cooked through to an internal temperature of 165°F.
While roasting, heat the remaining teaspoon of olive oil in a small pot over medium heat and sauté the onion, garlic, and sage leaves until the onion is translucent.
Remove the chicken from the oven and shred it using two forks, then set it aside.
