Lemon Herb Baked Salmon with Asparagus
Flaky salmon fillets oven-roasted alongside crisp-tender asparagus spears infused with a bright, zesty lemon-herb marinade.
INGREDIENTS
7 oz Salmon fillet
1.5 cups Asparagus
0.5 tbsp Extra virgin olive oil
1 tbsp Fresh lemon juice
1 tsp Lemon zest
1 clove Garlic
1 tsp Dried oregano
0.25 tsp Sea salt
0.25 tsp Black pepper
PREPARATION
Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
Trim the tough, woody ends off the asparagus spears and spread them out on one half of the prepared baking sheet.
Place the salmon fillet on the other half of the baking sheet.
In a small glass jar or bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, sea salt, and black pepper.
Drizzle the lemon-herb mixture evenly over the salmon and the asparagus, using a pastry brush to ensure the fish is well coated.
Roast in the center of the oven for 12 to 15 minutes, or until the salmon is opaque and flakes easily with a fork and the asparagus is tender.
Remove from the oven and serve immediately, optionally garnishing with fresh parsley or an extra squeeze of lemon.
