Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
Scrub the sweet potato and dice it into 1/2-inch cubes, then trim the ends off the fresh green beans.
In a mixing bowl, toss the sweet potato cubes with 0.5 tbsp of olive oil, half of the minced garlic, and a pinch of salt and pepper.
Spread the sweet potatoes onto one side of the prepared baking sheet and roast for 10 minutes.
While the potatoes are roasting, rub the chicken breast with the remaining 0.5 tbsp of olive oil, the rest of the garlic, rosemary, thyme, salt, and pepper.
Remove the sheet from the oven, move the potatoes to one side, and place the chicken breast and green beans on the other side of the pan.
Return the sheet to the oven and roast for another 18-22 minutes until the chicken reaches an internal temperature of 165°F and the potatoes are golden and tender.
Let the chicken rest for 5 minutes before slicing to ensure the meat remains juicy and flavorful.
