Savory Chicken and Vegetable Fried Rice
Sautéed chicken breast and crisp vegetables tossed with fluffy brown rice and savory tamari for a fragrant and satisfying meal.
INGREDIENTS
4.5 oz chicken breast
0.5 cup cooked brown rice
1 large egg
0.25 cup frozen peas
0.25 cup frozen diced carrots
1 tsp avocado oil
0.5 tsp toasted sesame oil
1 tbsp tamari
2 cloves garlic
1 stalk green onion
0.25 tsp sea salt
0.25 tsp black pepper
PREPARATION
Cut the chicken breast into small, uniform bite-sized pieces and season with the sea salt and black pepper.
Heat the avocado oil in a large non-stick skillet or wok over medium-high heat until it begins to shimmer.
Add the chicken to the skillet and sauté for 5 to 6 minutes until golden brown and cooked through, then remove the chicken and set it aside on a plate.
In the same skillet, add the frozen peas, diced carrots, and minced garlic, sautéing for about 3 minutes until the vegetables are tender.
Push the vegetable mixture to one side of the pan and crack the egg into the empty space, scrambling it quickly with a spatula until just set.
Return the cooked chicken to the pan and add the cooked brown rice, tamari, and toasted sesame oil.
Toss all ingredients together over high heat for 2 minutes until the rice is slightly crispy and the flavors are well-combined.
Remove from heat and garnish with thinly sliced green onions before serving warm.
