Remove the chicken from the skillet and set it aside to rest on a cutting board.
In the same skillet, add the remaining 0.5 tbsp of olive oil along with the diced red onion and red bell pepper.
Sauté the vegetables for 3-4 minutes until they are tender and slightly caramelized.
Stir in the riced cauliflower and cook for an additional 5 minutes, stirring frequently until the rice is tender but not mushy.
Slice the rested chicken into strips.
Divide the cauliflower rice mixture into bowls, top with the sliced chicken, fresh avocado, and a sprinkle of chopped cilantro.
