PREPARATION
Heat the coconut oil in a large skillet or wok over medium-high heat.
Season the prawns with sea salt and black pepper, then sear for 1-2 minutes per side until pink and just cooked through; remove and set aside.
In the same pan, add the green curry paste and sauté for 1 minute until highly fragrant.
Pour in the chicken broth and coconut milk, whisking gently to fully incorporate the curry paste.
Add the sliced red bell pepper, snap peas, and baby corn to the broth, simmering for 3-4 minutes until the vegetables are tender-crisp.
Return the cooked prawns to the pan and stir in the fresh lime juice and fish sauce.
